12 cups Crispix or Chex cereal
2 cups pecan halves
1 cup (2 sticks) unsalted butter
2 cups packed light brown sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
1/4 teaspoon baking soda
Instructions
Preheat your oven to 250°F (120°C). Line two large baking sheets with parchment paper.
In a large bowl, combine the cereal and pecans.
In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar until dissolved. Bring the mixture to a boil and cook for 5 minutes, stirring constantly.
Remove the saucepan from the heat. Stir in the vanilla extract, salt, and baking soda. The mixture will foam up.
Pour the praline mixture over the cereal and pecans. Stir gently until everything is evenly coated.
Spread the coated mixture in a single layer onto the prepared baking sheets.
Bake for 1 hour, stirring every 15 minutes to ensure even crisping.
Turn off the oven and let the mix cool completely inside the oven with the door slightly ajar. This helps it become very crisp.
Once cooled, break the snack mix into clusters or shards.
Store in airtight containers at room temperature. For gifts, package in cellophane bags or decorative tins.
Notes
This snack mix can be made ahead and stored for up to a week.
For a spicier kick, add 1/4 teaspoon of cayenne pepper to the praline mixture.
