Ingredients
Scale
8 ounces feta cheese, crumbled
1 cup pumpkin puree (not pie filling)
2 tablespoons olive oil
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional garnishes: chopped fresh herbs (like parsley or chives), honey, red pepper flakes, toasted pumpkin seeds
Instructions
Combine feta cheese, pumpkin puree, olive oil, minced garlic, salt, and pepper in a food processor.
Process until smooth and creamy, scraping down the sides as needed. This may take 2-3 minutes.
Transfer the dip to a serving bowl.
Swirl the top with a spoon and add your desired garnishes.
Serve with pita bread, crackers, or fresh vegetables.
Notes
For best results, use full-fat feta cheese.
The dip can be made up to 2 days in advance and stored in an airtight container in the refrigerator. Let it sit at room temperature for about 15 minutes before serving for easier spreading.
