  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin

  • 2 tablespoons chopped fresh cilantro
  • 12 small corn or flour tortillas
  • For the Avocado Crema:
  • 1 ripe avocado
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon salt
  • For the Slaw:
  • 2 cups shredded green cabbage
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon olive oil

Instructions

  1. Prepare the shrimp: In a bowl, toss the shrimp with olive oil, chili powder, cumin, salt, and pepper. Set aside to marinate while you prepare the crema and slaw.
  2. Make the avocado crema: Combine the avocado, Greek yogurt, lime juice, and salt in a small food processor or blender. Blend until completely smooth. If the mixture is too thick, add water, one teaspoon at a time, until you reach a drizzly consistency.
  3. Prepare the slaw: In a medium bowl, combine the shredded cabbage, cilantro, lime juice, and olive oil. Toss well to coat.
  4. Cook the shrimp: Heat a large skillet over medium-high heat. Add the seasoned shrimp in a single layer. Cook for 2 to 3 minutes per side, until the shrimp are pink and opaque. Immediately remove the skillet from the heat and stir in the 1/4 cup of lime juice and 2 tablespoons of cilantro.
  5. Warm the tortillas: Warm the tortillas according to package directions, either in a dry skillet or wrapped in a damp paper towel in the microwave.
  6. Assemble the tacos: Layer each warm tortilla with a portion of the shrimp, top with the crunchy slaw, and drizzle generously with the avocado crema. Serve immediately.
