Place the bacon pieces in a large skillet or cast-iron pan over medium heat. Cook until the bacon is crisp. Remove the bacon pieces with a slotted spoon and set them aside, leaving the rendered bacon grease in the pan.
Add the minced garlic to the skillet and cook for 30 seconds until fragrant. Do not let the garlic burn.
Add the sliced cabbage to the skillet. Sprinkle with salt and pepper. Toss to coat the cabbage with the grease and seasonings.
