Follow this simple technique to make roasted sweet potatoes that are caramelized on the outside and soft inside. This easy recipe is a healthy side dish for any weeknight dinner or holiday meal.

  • 3 large sweet potatoes, scrubbed and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper for easier cleanup.
  2. Place the cubed sweet potatoes in a large bowl. Drizzle with olive oil.
  3. Add the salt, pepper, and garlic powder to the bowl. Toss everything together until the sweet potatoes are evenly coated.
  4. Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to ensure crisp edges.
  5. Roast for 20 minutes.
  6. Remove the pan from the oven and carefully flip the sweet potatoes using a spatula.
  7. Return the pan to the oven and roast for another 10 to 15 minutes, or until the edges are caramelized and the centers are tender when pierced with a fork.
  8. Serve immediately as a healthy roasted side dish.
