Make soft, chewy strawberry cake mix cookies using only three ingredients. These quick cookies roll in powdered sugar for a sweet, crinkly top and are ready fast.

  • 1 box (15.25 oz) strawberry cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, combine the strawberry cake mix, eggs, and vegetable oil. Mix with a spoon or electric mixer until a soft dough forms. Do not overmix.
  3. Pour the powdered sugar into a shallow dish.
  4. Scoop the dough by rounded tablespoons and roll each portion into a smooth ball.
  5. Roll each dough ball completely in the powdered sugar until fully coated.
  6. Place the coated balls onto the prepared baking sheets, leaving about 2 inches between them.
  7. Bake for 8 to 10 minutes. The edges should look set, but the centers will still look slightly soft.
  8. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely. The powdered sugar coating will set into a crinkle pattern as they cool.

Notes

  • For a richer strawberry flavor, use a brand of cake mix that includes real fruit pieces if available.
  • If you want a slightly thicker cookie, chill the dough for 15 minutes before rolling and baking.
  • For a variation, add 1/2 cup of white chocolate chips to the dough mixture.
