Make this hot, cheesy, and creamy Texas Trash Dip for your next gathering. This Tex-Mex favorite uses simple ingredients like refried beans, cream cheese, and taco seasoning, making it the perfect crowd-pleasing appetizer for game days or potlucks.

  • 1 (16 ounce) can refried beans
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup sour cream
  • 1 packet taco seasoning
  • 1 (10 ounce) can diced tomatoes and green chiles (like Rotel), drained
  • 2 cups shredded Monterey Jack cheese
  • 2 cups shredded Cheddar cheese
  • Optional: 1 pound cooked ground beef or sausage, drained
  • Optional Garnish: Sliced black olives, chopped green onions

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the softened cream cheese, sour cream, and taco seasoning. Mix until smooth.
  3. If you are making the meaty version, add the cooked and drained ground beef or sausage to the cream cheese mixture and stir to combine.
  4. Spread the refried beans evenly over the bottom of the prepared baking dish.
  5. Spread the cream cheese mixture over the layer of refried beans.
  6. Top the cream cheese layer with the drained diced tomatoes and green chiles.
  7. Mix the Monterey Jack and Cheddar cheeses together. Sprinkle half of the cheese blend over the top layer.
  8. Bake for 20 to 25 minutes, or until the dip is hot and bubbly around the edges.
  9. Remove the dish from the oven. Sprinkle the remaining half of the cheese blend over the top. Return to the oven for 5 more minutes, or until the cheese is fully melted and gooey.
  10. If using, garnish with sliced black olives and chopped green onions before serving hot with tortilla chips.

Notes

  • You can prepare the entire dip, cover it, and refrigerate it up to 24 hours ahead of time. Add about 10 minutes to the initial baking time if baking directly from the refrigerator.
  • For a slow cooker version, combine all ingredients (except optional garnishes) in a 3-quart slow cooker. Cook on low for 2-3 hours or on high for 1-1.5 hours, stirring halfway through. Top with remaining cheese for the last 15 minutes.
  • Use spicy refried beans or add a few dashes of hot sauce to the cream cheese mixture for extra heat.
