  • 1 pound ground chicken
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup soy sauce or tamari (for gluten-free)
  • 2 tablespoons rice vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon chili garlic sauce (adjust to taste)
  • 1/4 cup water
  • 1/4 cup creamy peanut butter
  • 1 tablespoon lime juice
  • 1 head butter lettuce or iceberg lettuce, leaves separated
  • 1/2 cup shredded carrots
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons chopped peanuts, for garnish

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat. Add ground chicken and cook, breaking it up, until browned. Drain any excess fat.
  2. Add minced garlic and grated ginger to the skillet. Cook for 1 minute until fragrant.
  3. In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, chili garlic sauce, and water. Pour this mixture over the chicken. Cook, stirring, until the sauce thickens slightly, about 3 minutes. Remove the chicken mixture from the heat.
  4. In a separate small bowl, whisk together the peanut butter and lime juice until smooth. Add 2-3 tablespoons of warm water from the chicken pan to thin the sauce to a drizzling consistency.
  5. To serve, spoon the warm chicken filling into the center of each lettuce leaf. Top with shredded carrots and fresh cilantro. Drizzle with the peanut sauce and sprinkle with chopped peanuts.

Notes

  • For a spicier filling, increase the amount of chili garlic sauce in the main mixture.
  • Use tamari instead of soy sauce to make this recipe gluten-free.
  • You can substitute ground turkey or finely chopped mushrooms for the chicken.
