2 cups grated zucchini
1/2 cup all-purpose flour
1 large egg
1/4 cup grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil for frying
Instructions
Grate the zucchini and place it in a colander. Let it sit for 10 minutes to drain excess water. Gently press out any remaining moisture.
In a medium bowl, combine the grated zucchini, flour, egg, Parmesan cheese, salt, and pepper. Mix until just combined.
Heat the olive oil in a large skillet over medium-high heat.
Drop spoonfuls of the zucchini mixture into the hot skillet, flattening them slightly with the back of the spoon to form patties.
Fry for 3-4 minutes per side, until golden brown and crispy.
Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
Serve hot.
Notes
For extra crispy fritters, ensure you remove as much moisture from the zucchini as possible.
You can add other seasonings like garlic powder or chopped chives to the batter.
These fritters can also be baked at 400°F (200°C) for 15-20 minutes, flipping halfway through, for a healthier option.
Air fryer instructions: Preheat air fryer to 375°F (190°C). Lightly spray fritters with oil. Cook for 10-12 minutes, flipping halfway, until golden and crispy.
