Quick and crispy zucchini fritters made with minimal ingredients, perfect for a snack or side dish.

  • 2 cups grated zucchini
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for frying

Instructions

  1. Grate the zucchini and place it in a colander. Let it sit for 10 minutes to drain excess water. Gently press out any remaining moisture.
  2. In a medium bowl, combine the grated zucchini, flour, egg, Parmesan cheese, salt, and pepper. Mix until just combined.
  3. Heat the olive oil in a large skillet over medium-high heat.
  4. Drop spoonfuls of the zucchini mixture into the hot skillet, flattening them slightly with the back of the spoon to form patties.
  5. Fry for 3-4 minutes per side, until golden brown and crispy.
  6. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
  7. Serve hot.

Notes

  • For extra crispy fritters, ensure you remove as much moisture from the zucchini as possible.
  • You can add other seasonings like garlic powder or chopped chives to the batter.
  • These fritters can also be baked at 400°F (200°C) for 15-20 minutes, flipping halfway through, for a healthier option.
  • Air fryer instructions: Preheat air fryer to 375°F (190°C). Lightly spray fritters with oil. Cook for 10-12 minutes, flipping halfway, until golden and crispy.
