1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup packed light brown sugar
1/4 cup granulated sugar
1 large egg
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set this dry mixture aside.
In a large bowl, use an electric mixer to beat the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy, about 2 minutes.
Beat in the egg until just combined. Mix in the applesauce and vanilla extract until smooth.
Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix the dough.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10 to 12 minutes, or until the edges are lightly golden brown. The centers will look soft.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For extra moisture, use unsweetened applesauce that is slightly warmer than room temperature.
If you prefer a lower sugar cookie, reduce the granulated sugar by 1 tablespoon.
You can add 1/2 cup of rolled oats to the dough for a chewier applesauce oatmeal cookie texture.
