- 1/2 cup olive oil
- 1/2 cup fresh lime juice
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1/4 cup chopped fresh cilantro
- In a bowl, whisk together olive oil, lime juice, and soy sauce.
- Add minced garlic, oregano, cumin, chili powder, black pepper, and cayenne pepper (if using). Stir well.
- Stir in chopped cilantro.
- Place your chosen cut of meat (skirt steak or flank steak are recommended) in a resealable bag or shallow dish.
- Pour the marinade over the meat, ensuring it is fully coated.
- Marinate in the refrigerator for at least 2 hours, or preferably overnight, for best flavor.
- Remove meat from marinade and grill to your desired doneness.
Notes
- For a spicier marinade, add more cayenne pepper or a minced jalapeño.
- Ensure you use fresh lime juice for the best citrus flavor.
